Little Mince Pie Cakes



Right, so I know Christmas is long gone but I need to finish my Christmas blogging and I've been a bit of a slacker so please do bear with me. I have to share this recipe from BBC Good Food as I make it every year and these cakes go down a storm - even with my mince pie hating husband.

They're really easy to make, especially if you bung it all in a mixer, and because they only use a small amount of mincemeat, they're perfect for people who are not so keen on it. The mixed spice makes them smell all lovely and festive.

Little Mince Pie Cakes


Ingredients

175g self-raising flour
100g light muscovado sugar
1 tsp mixed spice
175g softened butter
3 eggs
2 tbsp milk
140g mincemeat
icing sugar for dusting

Method

Heat oven to 190C/fan 170C/gas 5. Line 12 bun tins with paper cases. Put the flour, sugar, spice, butter, eggs and milk into a mixing bowl and beat with an electric hand whisk or wooden spoon for 2-3 mins, until the mix is light and fluffy.

Put a spoonful of cake mix in each case, then a rounded tsp of mincemeat. Cover the mincemeat with a spoonful of cake mix and smooth.

Bake for 15-18 mins until golden brown and firm. Dust with icing sugar and serve warm or cold.

Probably a bit late for this year, but who says mincemeat is just for Christmas, huh?
