Meal Planning Monday (17th March 2014)


Hello!

Let's start by talking about the weather - we always do. WOW. Pretty much sums it up doesn't it? I heard a rumour it's here to stay for a while, let's hope so. Certainly improves my mood and motivation. The children have spent the entire weekend outside which can only be a good thing. 

I must mention St Patricks Day of course too - if you're Irish, hope you're having a good one! My mother is Irish and I have a big Irish family. I've written a St Patricks Day post in the past.

I've been a terrible blogger recently, so much to catch up on. Work is definitely getting in the way of play which is ironic as I am now "working" (ie being paid) for less hours but working double because I am so busy. How fair is that?! (Answer: Not very). That increased workload coupled with an imminent start on a professional qualification and the demands of two children and school mean there's not a lot of mental energy left for anything else but I am muddling on and I'm sure everything will fall into place eventually.

Life HAS got busy which means that meal planning is even more important. Here's what we'll be having this week:

Steak & Stilton sandwiches
Beef & broccoli stir-fry
Spaghetti with prawns & rocket
Halloumi salad with pitta crisps
Homemade tomato & chilli soup with baguettes
Enchiladas

Yum, quite looking forward to this week - lots of variety!
